I hope you are doing so well, I apologize for not posting in a while. This summer has been both wonderful and busy. I have attended and participated in weddings, taught multiple music classes and am loving a new part time nanny position.
My 3 months of Keto came to an end, but as I have tried some of the old foods I ate, I realized I do not feel as good after eating them. My perspective of food is changing. Food is both a necessity and a delight. I want to eat what fuels my body the best. The low carb lifestyle really proved to do that for me, so I will be continuing a mostly low carb lifestyle from here and adding in a few wonderful foods that I have missed.
Tonight I was working on dinner and pulled out the zucchini from the fridge. Little did I know that this vegetable favorite would lead to a new delicious recipe! Let me introduce you to Zucchini Italian Quesadilla.
Step 1: Cook 1 zucchini on the stove top in 2 tbs of Olive oil. Add salt.
Step 2: Add 1/8 cup of Rao's Pizza Sauce and 1/4 cup of mozzarella cheese and 1/4 cup of parmesan cheese to an Ole Tortilla.
Step 3: Place zucchini on the tortilla.
Step 4: Cook quesadilla
Step 5: Cut into pieces and ENJOY!
