Mexican Pizza (Low Carb)

I initially wanted to begin this post with an apology for being off the grid the past week, but then I realized that I always find myself saying "sorry" and living life is not something to be sorry for at all. I have been able to watch my cousin graduate from high school, spend time with family in Georgia, celebrate the engagement of a couple who is like family in town, and teach over 150 young children last week, sorry not sorry! :) haha

One of the best things that I did before the end of May was invent a NEW PIZZA! Let me introduce to you the Mexican Pizza.


  • 1 Ole Tortilla

  • 1 tsp Olive Oil

  • 1/8 cup Rao's Homemade Pizza Sauce

  •  1/2 cup Beef

  • 1 cup Spinach

  • 4 Kalamata Olives

  • 1/2 cup Mozzarella Cheese

Step 1: Add 1 tsp olive oil and 1/8 cup of Rao's pizza sauce and cut the pizza into 4 pieces.

Step 2: Add 1/2 cup beef


Step 3: Add Spinach and 4 Kalamata Olives (1 per pizza slice)

Step 4: Cover with cheese and bake at 425 degrees for 6-8 minutes.


Step 5: ENJOY!

I love dipping mine in a guacamole dip: 1/2 avocado/1 TBS sour cream/Lime juice/Salt
