I cannot got too long without some taste of a potato. My family is Irish. I am convinced the craving is in my blood! However, potatoes are not exactly low carb. When living a low carb lifestyle, this was one area I was afraid to try because I had a bad experience with mashed cauliflower before, but the key is knowing how to flavor it.
My mom gets 100% credit for today's recipe. She is a southern woman who knows how to cook a delicious meal and Keto has not held her back! You can feel free to add bacon into your recipe, but I just love the smooth and creamy style below.
1 Package | Veggie Made Mashed Cauliflower Original by Birds Eye
2 TBS | Butter
1/2 Cup | Shredded Cheese
2 TBS | Sour Cream
Step 1: Microwave the mashed cauliflower for 4 minutes with the lid.
Step 2: Peel back the lid and stir, then recover and place back in the microwave for 3 more minutes.
Step 3: Place 2 TBS of butter and 1/2 cup of shredded cheese on the bottom of your dish.
Step 4: Pour the cauliflower on top of the butter and cheese, stir.
Step 5: Add salt, 2 TBS of sour cream, and stir.
Step 6: Enjoy!
